Brinjal sabji Recipe | Baingan Ki Masaledar Sabji

I share with you Baingan sabji recipe. Baingan  is so nutritious. A lot of people love brinjal less,  but brinjal’s vegetable seems  to be very tasty in eating. So plz try this sabji. I am sure you like this sabji. This sabji is so easy to made and so delicious in eating. So look how to make brinjal sabji (bainggan ki sabji)?


  • 500 gms Brinjal (Baingan)
  • 1 Tomato (Tamatar)
  •  1 Tsp chopped Green chili (Hari mirch)
  •  ½ Tsp Ginger Paste (Adrak Paste)
  • ½ Tbsp chopped Green Chillis (Hari Mirch)
  • 1 Tbsp Turmeric Powder (Haldi Powder)
  •  Pinch of Asafetida (Hing)
  •  ½ Tbsp Red Chilli Powder (Lal Mirch Powder)
  • ½ Tbsp Coriander Leaves (Hara Dhania)
  •  ½ Tsp Coriander Powder (Dhania Podwer)
  •  ½ Tsp Cumin Seeds (Jeera)
  • 1½ Tbsp oil (Tel)
  • Salt to taste


 Firstly, wash the brinjal and cut into small pieces and keep a side. Heat oil in a pan, add cumin seeds. When crackle the seeds then add green chilli, ginger paste and asafetida and fry few seconds. Now add chopped brinjal pieces, red chilli power, turmeric powder, coriander powder, salt and cook till brinjal is soft.  Wash the tomatoes and cut into medium pieces. Add tomato pieces and cook it. Remove the flame. Add coriander leaves and mix well. So prepare your Baingan Sabji. Transfer to a bowl.  Serve in serving plate with poori, paratha
