Today we make Bharwan Bhindi. It is very tasty and spicy recipe. A spicy delicious filling that is filed in the slit Bhindis makes for a lovely side dish with roti or Paratha. I like Bharwa Bhindi. Bharwa Bhindi is every Indian’s delight. Also this is not a spicy Bharwa Bhindi as I have used red chilli powder in moderation. This recipe making time remember, rinsing, drying and then stuffing the bhindi does take time. Bharwa Bhindi can also be served as starters. Bharwan bhindi makes for an excellent side veggie dish with rotis and dal. Summers are here and I most of the times go for light veggie dishes and yogurt curries. This is a simple Indian home food. - 250 gm Lady Finger (Bhindi)
- 2 tbsp Oil (Tel)
For The Stuffing
- 2 tbsp Coriander leaves (Hara dhania)
- 1 tsp Coriander powder (Dhania powder)
- 3 tbsp Red Chilli powder (Lal mirch powder)
- 1 tsp Cumin seeds (Jeera)
- 1 tsp Turmeric powder (Haldi powder)
- Salt to taste (Namak)
- 1 tsp Dried Mango Powder (Aamchur Powder))
First wash, clean and dry the Bhindies. Slit the bhindis in between lengthwise after cutting both the ends, taking care not to split into 2 (cut bhindi very carefully and cut without breaking) combine the Coriander powder, Chilli powder, Dried Mango powder and Salt and mix well. Add Cumin seeds, Turmeric powder and mix well. Stuff the masala in the bhindi one by one with your hands, but very careful (don’t break it). Heat oil in Kadai. Add the stuff bhindi and cover and cook on a slow flame, while turning in between. So prepare your Bharwan Bhindi. Serve Bharwan Bhindi hot with roti or Paratha.
