Malpua is a very is a very popular Indian Pancake. This malpua is famous for Udaipur and Pushkar. This is a Rajasthani recipe. Malpua is an Indian sweet dish that is basically a sugar syrup soaked pancake. These malpua are a special at festivities and always prepared for “Hariali Umavas”. This is a very tasty and easy dessert. The malpua (pancake) batter can be sweetened as in this recipe or the fried malpua can be soaked in cardamom flavored syrup. There are many variations of Malpua based on the region it is prepared. Malpua made in Milk, Refined flour, Mava, Semolina. I like this malpua, and I’m sure you like also. - 1 littre Milk (Doodh)
- ¼ cup Refined Flour (Meda)
- 2 tbsp Mava / Khoya
- 2 tbsp Semolina (Suji)
- ½ tsp Cardamom powder (Elaichi powder)
- 4 cups Sugar (Chini)
- 2 cups Water (Pani)
- 1 tbsp Milk (Doodh)
- Ghee for frying
Boil the milk till it reduces to ½ its quantity. Cool down. Take a bowl, add boil milk in bowl. Add Refined Flour, Semolina, Crumble Mava / Khoya and mix well. There should be no lumps. Stirring and mix till all ingredient mix properally. (2-5 minute) keep a side for 5-10 minutes. Heat the ghee in fry in pan (smear very little ghee on a frying pan). Spread a small amount of the batter on it. (Pour in circular). Movements into the ghee to form a small pan cake, turn over. Take care that it does not become crisp.
To Make Sugar Syrup:-
Heat a pan, add water and sugar. Boil to 1 thread consistency. Add cardamom Powder, and switch off the guess. Dip the malpuas in the warm sugar syrup or 1-2 minutes and drain.
You can add some Rabri on top of the Malpas.
