Today we make Aam ki Lunji. This is a very tasty recipe. Aam ki lunji is popular of Rajasthan. It is sweet. Raw mangoes are supposed to be cooling for our body system. This recipe is another way to combat the heat. Aam ki launji made in raw mango, sugar as Jaggery, fennel seeds, fenugreek seeds etc. raw mango to made aam ka panna, aam ki subji and other recipe. Aam ki Launji store in the refrigerator for 6 to 7 days. Aam ki lunji is very tasty to eat. Aam ki lunji eat with roti or paratha. So let’s start to made aam ki lunji (Aam ki sabji).
2 cups chopped, Raw Mangoes (Kachche aam)
½ tsp Fennel seeds (saunf)
½ tsp fenugreek seeds (Methi dana)
½ tsp Turmeric powder (Haldi powder)
½ tsp Cumin seeds, (Jeera)
4-6 tbsp Sugar Or Jaggery (Chini Ya Gud)
1 tbsp Mustard oil (Sarso Ka Tel)
1 tbsp Red Chilli flakes
Salt to taste
Firstly, wash and cut mango pieces in medium size. Now boil water and mango pieces in a kadhai for 2 to 3 minutes. Remove the flame and wash the boil mango pieces with cold water for 2 times. Heat oil in pan. Once heated, add the fenugreek seeds, fennel seeds, and cumin seeds. When seeds start to crackle & you smell the aroma. Add the mango pieces and saute 1minute. Add the turmeric powder, red chilli flakes, salt and cook on medium heat to combine well with the other ingredients. Cover the lid and cook for 3-4 minutes. Add the sugar or gud and combine gently with mangoes. Cook for until the sugar has completely melted and mangoes are cooked thoroughly. Remove the flame. So see your Aam ki launji is ready. Transfer to a serving bowl.
Note :– Aam ki Launji store in a refrigerator for 6-7 days.
You can add Jaggery too.
